Roasted Tomato and Goat Cheese Crostini

I LOVE APPETIZERS. They’re the best part of any meal in my humble opinion. When I go to a restaurant, I’m the type of person who will order 3 or 4 apps for myself instead of an entree. I had tons of fresh cherry tomatoes growing in the garden this year, and needed to come up with lots of recipes to use them up!

Another element to this recipe straight out of my garden is the herbs- fresh basil and oregano! This appetizer is all about textures; crunchy baked baguette slices, creamy goat cheese, tangy roasted tomatoes, fresh chopped herbs….. so good.

Ingredients:

  • 1 tsp chopped oregano
  • 1tsp chopped basil plus extra leaves to garnish with
  • 3 cloves minced garlic
  • 2 cups cherry tomatos
  • 1tbs olive oil
  • 2tsp balsamic vinegar
  • 1/3 cup red wine
  • 4oz goat cheese (bring to room temp before starting so it spreads easier)
  • 1 tbs butter
  • 1 french baguette, sliced into crostini rounds

 

Directions:

  1. Preheat oven to 450 degrees. Slice all your cherry tomatoes in half, and put in a large baking dish. Season with salt, pepper, basil, and oregano, then add in olive oil, balsamic, and red wine. Toss to combine.
  2. Roast tomatoes for 25 minutes.
  3. Combine butter and garlic in a small dish. Spread butter on to each baguette slice, and toast the slices in the oven for 5 minutes.
  4. Spread a little goat cheese onto each slice of bread once it comes out of the oven. Top with  roasted tomatoes, and garnish with remaining basil leaves.
